That tower sabotage has to be among the toughest I've seen on the show (I've only seen the first two seasons though).

Thinking of that, it reminds me of something I've wondered... Do the contestants have to fill two plates? It seems most do, but the judges only touch one. When someone has a small dish, could they just plate one and not get knocked for it?

Finally, considering how Food Network uses these shows as testing grounds for new talent, I'd love to see more of Demarco. He was entertaining without being over-bearing.

I really can't figure out how Demarco's eggs turned out ok with the sabotage unless he was allowed to come down and turn off the heat as soon as he finished scrambling them.

Do the contestants have to fill two plates?

Probably yes. Based on what Brauch told me about Iron Chef, a chef I worked under told me about her time on Top Chef, and someone I can't name yet told me about Chopped, all contestants have to make the plate(s) for tasting, and one 'beauty plate' for photography. That's why on Chopped you see everyone making four plates for three judges. On IC, one plate gets whisked away for photography--that's the plate the Chairman ends up eating, poor fellow. On Top Chef they hide it more, though if you watch carefully you can see the contestants making more plates than there are judges (except for quickfire challenges).
